      A keen market observation sparked our next big idea—a professional slushie/slurpee frozen drink machine. Knowing it would be a hit in the hot tropical climate, we jumped on the opportunity. I went to work creating three refreshing frozen drink recipes, each with a coconut twist. The coco pina slush, coco mangogo slush, and watermelon slush became an instant hit, quenching our customers' thirst and boosting our income by 300% per drink.
      Sweet Success in Dessert
      Our frozen dessert tarts, with their resemblance to ultra-premium key lime pies, captured customers' hearts and taste buds. As they inquired about the recipe, we saw the potential for a wholesale bakery collaboration. Despite our best efforts, it didn't pan out as we hoped, but the experience taught us to seize every opportunity that comes our way, for you never know what doors it may open.
      Exploring New Ventures
      While our restaurant remained a force to be reckoned with, we kept our eyes open for new ventures. Expanding to a food truck was a tantalizing idea, though we didn't pursue it ourselves. Instead, we considered the option of multiple food carts or tuk-tuks, servicing different locations with our existing kitchen. This expansion allowed us to spread our brand's influence, one unit at a time.
      Franchising Dreams
      The dream of franchising the Toucanoos brand was on the horizon, with interested parties in Canada and the USA. But fate had other plans as Covid-19 swept through, forcing us to adapt and rethink our strategy.
